Coat two coffee mugs with cooking spray.
In a small bowl, mix the buckwheat flour, baking powder and salt with a fork. Add the eggs and coconut milk, and continue to mix with the fork.
Divide the mixture evenly between the coffee mugs and microwave until a toothpick inserted in the center of a bread comes out clean, about 90 seconds. Turn out, slice and eat.
Tip: This bread toasts up like any other bread, either in a toaster oven or a pan.
