Ingredients
1/4 cup red onion, finely chopped
1 tablespoon cilantro, finely chopped
1 lime, Juice of
Salt and pepper
1 Roma tomato, sliced
Butter
2 slices white bread
2 slices pepperjack cheese
Yield
Serves: 1
Preparation
In a small bowl, combine the red onion, cilantro and lime juice. Season with salt and pepper.
Season the tomato slices with salt and pepper.
Butter one side of each bread slice. Lay a bread slice flat, butter-side down, and top with some tomato slices, a slice of cheese, a scoop of the red onion mixture, and the remaining cheese slice. Set the remaining bread slice on top, butter-side out.
Heat a nonstick griddle over medium heat. Add the sandwich and cook for 3-4 minutes, then flip, cover the sandwich with a metal bowl, and cook for 2 minutes more.
