Playing Pistachio Nice Cream

Senior Culinary Producer Jeanette Donnarumma uses a food processor to churn out a healthy and dairy-free sub for ice cream.

Ingredients

  • 3 bananas, thinly sliced and frozen
  • 1 avocado, diced
  • ½ cup toasted pistachios, chopped, divided
  • ½ teaspoon almond extract
  • Pinch salt
  • 1/3 cup maple syrup

Yield

Serves: 4

Preparation

Add frozen bananas, avocado, half the pistachios, the almond extract, and salt to a food processor bowl. Pulse and begin to combine the ingredients. While pulsing, stream in maple syrup so ingredients begin to “churn;” add a splash of water, if needed, to get the bananas moving. Continue to pulse until smooth and creamy. Serve immediately in bowls topped with remaining pistachios.
