Ingredients

  • ¾ cup, plus 2 tablespoons butter
  • 2½ cups basmati rice, rinsed and drained
  • 1 teaspoon salt
  • 1 quart boiling water 

Yield

Serves: 8

Preparation

Put the butter into a large pan on high heat until it becomes golden brown. As soon as it does, add the rice and salt and stir. Add the hot water and keep stirring until it comes to a boil—when it does, keep stirring until all the liquid has evaporated. Pop the lid on the pan and let the rice steam on low heat for 10 minutes.
