The Potash Twins—jazz faves of the food world and hosts of Bravo's "Bites & Beats"—share their cherry pie topping for latkes.

  • 4 cups pitted tart red cherries
  • 1 lemon, juiced
  • 1 cup granulated sugar
  • ¼ cup cornstarch
  • Latkes, for serving
  • 4 tablespoons confectioners' sugar


Serves: 12


In a large saucepan over medium heat, cook cherries until they begin to release their juices. Add lemon juice, stir constantly and bring to a simmer, 10 to 15 minutes. 

In a mixing bowl, whisk together granulated sugar and cornstarch. Pour over hot cherry mixture and stir to combine. Cook on low heat until mixture thickens, about 2 minutes.

Spoon cherry mixture over latkes, dust with confectioners' sugar and serve.
