Celebrity nutritionist Keri Glassman has been helping us nourish our bodies and brains for years. "Fueling your body properly can help your mental clarity, memory, and ability to focus," she explains. Recipes she's developed to promote brain health include her Overnight Oats, Easy 3-Bean Salad and this simple tomato bruschetta.

"Tomatoes contain lycopene," she says, "and the same lycopene that is good for prostate health is also fab for preventing dementia and Alzheimer's." A tasty and really simple way to prepare them is to cut them, toss with olive oil, salt and pepper and spoon onto toasted bread slices. Bruschetta is perfect for a snack or appetizer and is a popular party food!

  • 1 cup cherry tomatoes, quartered
  • 1 teaspoon olive oil
  • Dash of kosher salt and freshly ground black pepper
  • Four ½-inch-thick slices of sourdough bread, halved and toasted

Serves: 2

Toss the tomatoes, oil, salt and pepper in a small bowl. Divide tomatoes among toasted sourdough and serve.
