Rachael considers herself "the Queen of the Burger," but calls Johnny Yarusi "the King of the Breakfast Sandwich." The pork roll sandwich is iconic in New Jersey, and Rach says Johnny makes the best! He layers a hard roll with seared pork roll slices, American cheese, a fried egg, ketchup and hot sauce and does it all with love. It's a tasty way to start the day and is also good for lunch or dinner. (As you know, Rach loves "BLD"—breakfast, lunch or dinner—recipes!) If you're in New Jersey, stop in for a sandwich at Johnny's Pork Roll & Coffee Too in Red Bank, or look for his food truck—emblazoned with the logo "Eat More Pork Roll!"—in Asbury Park.

Ingredients

  • 4 pork roll slices (6 to 7 ounces)
  • 1 jumbo egg
  • Salt and pepper
  • Ketchup, to taste
  • Dash of piri piri sauce (Johnny likes Mazi), or hot sauce of choice
  • 1 hard roll, such as Kaiser, split
  • 2 slices white American cheese

Yield

Serves: 1

Preparation

Heat a griddle or large frying pan over medium-high heat. Cook pork roll slices on both sides until slightly seared. In the same pan, crack the egg, season with salt and pepper and fry (try to keep the yolk in the center) until the whites are set, but the yolk is still soft.

Meanwhile, put ketchup and a small bit of piri piri sauce on both sides of the split roll.

Assemble the sandwich in the following order: bottom half of roll, 2 pork roll slices, 1 slice cheese, egg, 1 slice of cheese, 2 pork roll slices, top half of roll. Slice sandwich in half. Drool. Eat.
