You only need two ingredients from your pantry to make this healthy snack from the author of Modernist Cuisine At Home, Nathan Myhrvold.

Ingredients

  • Salt and pepper
  • Extra-virgin olive oil
  • 1 can chickpeas, drained over a paper towel

Preparation

Preheat oven to 250 °F. Place chickpeas on a baking sheet and dehydrate them for 30-40 minutes.

Drizzle olive oil onto a microwave-safe plate. Place chickpeas on the plate and microwave for 6 minutes. Lightly toss them in the oil.

To further dry them out, remove chickpeas from plate. Place 1-2 sheets of paper towel on the plate, add chickpeas and microwave for 4 minutes more. Remove and let cool.

Season with salt and pepper and serve.
