Rach's Asian-inspired green rice is delicious with her Mu Shu for a night of Make Your Own Take Out.
Ingredients
- 1 ½ cups chicken or vegetable stock
- 1 cup basmati or white rice
- 2 cups spinach
- 1 inch ginger root, peeled, then grated or chopped (or 1 teaspoon dried ground ginger)
- 4 scallions chopped
- 2 large cloves garlic, chopped
- Salt
- 1 green chile pepper and/or a handful of cilantro (optional)
Yield
Serves: 4 to 6
Preparation
Heat stock to boil, add rice and cook at low simmer, covered, 15 minutes.
Process the spinach and remaining ingredients in food processor to finely chop, then stir into rice and cook 10 minutes more. Remove from heat, and fluff with fork to serve.
