Grab a mini muffin tin and some cookie dough to bake off a batch of these cute cookie cups for ice cream.
Preheat oven to 350F.
Cut the cookie dough log into 1/2-inch discs, then slice each disc in half. Roll the pieces of cookie dough into balls and place them into mini muffin cups. Using your fingers or a spoon, press the dough into a cup shape to fit the muffin cups.
Transfer to oven and bake until puffed up but not quite done, about 10 minutes. Remove from the oven and, gently press the middle of the cookie down with a spoon to create an indent. Return the pan to the oven and continue baking until golden brown, about 5 minutes. Cool the cookies completely before serving.
To serve, scoop a small dollop of ice cream into the center of each cookie cup and garnish as desired.
