Ingredients

  • 6 cups whole milk
  • 3/4 pound elbow macaroni
  • Sea salt and black pepper
  • 1 head cauliflower, broken into small florets
  • 2 tablespoons unsalted butter
  • 2/3 cup mature cheddar, grated
  • 2 teaspoons Dijon mustard

Serves: 6

Preparation

Put the milk and macaroni in a medium ovenproof saucepan or shallow dutch oven; season well with salt and pepper. Bring to a boil then reduce to a simmer and cook for 10 minutes, stirring frequently.

Add the cauliflower and cook 3 to 5 minutes more, until both cauliflower and pasta are tender and the sauce is thickened and reduced and coating the pasta. Add butter, cheese and mustard and cook, stirring, over low heat until the cheese has melted.

Preheat the broiler. Transfer pan to the oven and broil until browned on top, then serve immediately.
