When culinary producer Grant Melton was sent to help a New York City mom-of-three in the kitchen, one of his challenges was creating a veggie dish that her kids would love! Grant’s genius solution: Make it taste like pizza. Broccoli florets get tossed with parm, oregano and garlic before roasting for a side dish that’s practically snackworthy. 

Ingredients

  • 4 cups broccoli florets
  • 2 tablespoons olive oil
  • 1/4 cup parmesan cheese
  • Salt and pepper
  • 1 clove garlic, grated
  • 1 teaspoon dried oregano
  • Pinch red pepper flakes
  • Finely chopped parsley and/or basil

Serves: 6

Preparation

Preheat oven to 400˚F with a baking sheet on a rack.

Combine the broccoli and olive oil in a bowl or resealable plastic bag. Add the parmesan cheese, salt, pepper, garlic, oregano and red pepper flakes, and toss to coat.

When the oven is preheated, remove the baking sheet from the oven. Working quickly, add the seasoned broccoli to the pan and return to the oven. Roast 20 minutes. 

Remove the baking sheet from the oven oven and let cool slightly. Add chopped herbs and serve.
