John created this refreshing cocktail for his 16th wedding anniversary. It was the perfect way to kick off their celebratory home-cooked dinner, which included Bistecca (Porterhouse) with Walnut Salsa Verde and Crispy Potato Skillet Pie.

Pro Tip from John: Since vermouth is a fortified wine, for the best flavor, put the bottle in the fridge after you open it and try not to keep it too long (conventional wisdom says about 28 days in a cool dark place). If you don't use it very often, get the smallest bottle possible.

Ingredients

  • 1 ½ ounces sweet (red) vermouth
  • 3 to 4 ounces sparkling white wine
  • 2 or 3 sprigs of thyme
  • Orange twist, for garnish

Preparation

Combine all ingredients in an ice-filled Collins glass, stir gently and garnish with orange twist.
