Corn, bell peppers and tomatoes come together for a quick, easy & colorful side that yummy hot or cold. 

Rach likes to serve this with her Sloppy Joe Tacos.


  • 2 tablespoons vegetable oil
  • 1 green or red bell pepper, diced
  • 2 cups frozen corn
  • ½ cup diced canned tomatoes
  • Salt and pepper
  • 1-2 teaspoons granulated onion
  • 1-2 teaspoons granulated garlic
  • 1 lime or lemon, juiced
  • Drizzle of honey
  • 1 bunch scallions, sliced on a bias, optional garnish


Serves: Makes 2 cups


Place a medium pot over medium heat, add oil. Add the bell pepper, let cook for a few minutes and then add the corn and tomatoes. Season with salt and pepper, granulated onion and garlic, juice of a lime, and honey. Stir to combine and taste to adjust seasoning. Top with scallions, if using.
