It’s National Ice Cream Sandwich Day and we’re making mix and match ice cream sandwiches that result in seemingly unlimited delicious options! First, choose a cookie recipe, then make some homemade ice cream! And don’t worry – we have a few super easy recipes in here as well!
Mix & Match Cookie Options:
For our first cookie, we have a recipe from Cookie Monster himself! This molasses cookie is actually pretty healthy for a dessert, with whole wheat flour and oat bran.
These red velvet cookies would be the perfect accompaniment to ice cream, especially if you make your sandwiches while they are still a little warm from the oven!
These nutrient-dense cookies are perfect if you want your treat to be healthy as well as tasty! The chewy texture makes it the perfect ice cream pairing.
Mix & Match Ice Cream Options:
This fun ice cream looks like camouflage when you scoop it! And it’s so easy to make! Start with a chocolate ice cream, a light brown ice cream like coffee, and a green ice cream like mint or pistachio. Then, just scoop randomly from the three containers into a loaf pan, periodically using another loaf pan to squish everything down and push the air pockets out. Put back into the freezer and refreeze the ice cream, then just scoop and serve. The scoops will be camouflage patterned.
This amazingly delicious ice cream uses Medjool dates as the base for a sticky toffee to blend with vanilla ice cream. Perfection!
This cleverly simple recipe calls for a gallon of pre-made vanilla ice cream, softened and then blended with any candy that you like! Pop it back in the freezer to re-set, and you’re done!
If you’re not feeling the mix and match options, you can always make Sunny’s Carrot Cake sandwiches. She’s taken all the guesswork out of it for you!
Lastly, the easiest recipe of all, which involves no cooking and only a tiny bit of prep! It was submitted to us by a viewer, and only requires store-bought ice cream and cookies! Watch the video above for the amazing tip!
What of the above combos sounds best to you? Tell us in the comments.
