Ingredients
- 1/2 cup Greek yogurt
- 1/4 cup pickle juice
- 2 to 3 tablespoons hot sauce
- 1 tablespoon EVOO – Extra Virgin Olive Oil
- Salt and pepper, to taste
- 1 1/2 pounds bone-in, skin-on chicken breasts

Serves: 4
Preparation
In a mixing bowl, whisk together the Greek yogurt, pickle juice, hot sauce, olive oil, salt and pepper. Add the chicken to the bowl and toss to coat in the marinade. (If you’re making this using what’s left in the Greek yogurt container, mix everything in the container and shake well then pour into a bowl and add chicken.) Marinate chicken for 30-45 minutes.
Arrange the top rack in the oven about 6 inches below the broiler and preheat broiler. Place the chicken on a sheet tray skin-side up and broil for 8-10 minutes or until chicken is cooked through, flipping occasionally.
Serve alongside or on top of a salad.
