Parents have a lot of challenges when it comes to dinnertime and one of them is getting kids to eat food that’s good for them!

Lauren Rabin from Allentown, Pennsylvania claims to be the queen of allergy-sensitive 4-ingredient recipes while Gina DiTommaso from Berkeley Heights, New Jersey says she’s a one dish dinner DIVA!

Check out their recipes below -- who knows? Maybe these will be your new go-to meals!

Gluten-Free Rosemary and Thyme Oat Flour Pizza with Sauteed Onions and Wild Mushrooms

If you eat a gluten-free diet, you know the struggle is real, and so does Lauren who says her children have food allergies. This pizza crust is made with oat flour which you can make right at home by grinding up oats in a food processor! Not only is this pizza cheesy and flavorful, but it's also vegetarian (which meat-eaters will still love thanks to those meaty mushrooms!) and gluten-free.

Gina is a busy mom, and as busy moms all know, cleaning up a massive pile of dirty dishes isn’t exactly on the top of anyone's wish list. So, she created her go-to one-dish juicy chicken dinner! She lays chicken thighs evenly on the bottom of a casserole dish, adds seasonings, olives, roasted red peppers and artichoke hearts then bakes it off for 45 minutes. DONE!
