If you’re looking for a healthy, homemade snack that tastes totally indulgent, try nutritionist Keri Glassman’s homemade sweet potato fries!
"Sweet potatoes are loaded with fiber, like potatoes," says Keri, who founded The Nutrition School in NYC. "But they’re also loaded with other nutrients, like vitamin A and beta-carotene."
Ingredients
2 whole sweet potatoes
Cooking spray
Sea salt
Freshly ground black pepper
Preparation
Preheat the oven to 400° F.
Peel and slice sweet potatoes into thin (1/8 inch) strips.
Spread in single layer on baking sheet.
Spray with cooking spray (generously) and sprinkle with salt and pepper.
Bake for 30 minutes or until crisp.
