John came up with this blood orange twist on the classic Tom Collins to pair with a light dinner recipe of Rach's, her Greek Fish Or Chicken In Parchment.

John's Tip: To make the rosemary simple syrup: Heat 1 part sugar, 1 part water, and 2 to 3 rosemary sprigs in a saucepan until the sugar melts. Cool and refrigerate in an airtight container.

Ingredients

  • 2 ounces gin
  • 1 ounce fresh blood orange juice or orange juice
  • ½ ounce Rosemary Simple Syrup
  • Ice
  • 2 ounces club soda
  • Rosemary sprigs, for garnish

Yield

Serves: 1

Preparation

Add gin, blood orange juice and simple syrup to an ice-filled cocktail shaker, shake vigorously, then strain into an ice-filled Collins glass. Top with club soda, then garnish with a rosemary sprig.
