Recipe developer and food blogger Justine Doiron started a craze last fall when she posted a video of herself assembling a gorgeous butter board on her @justine_snacks TikTok account, which has nearly 66 million likes! Here, she shares another amazing snack: her super-simple and tasty blood orange and thyme cake.

  • 1 2/3 cups all-purpose flour
  • 1 tablespoon freeze-dried strawberry powder
  • 2 teaspoons baking powder
  • ½ teaspoon ground cinnamon
  • 1 teaspoon salt
  • 1 cup white sugar
  • 1 teaspoon orange zest
  • About 1 teaspoon fresh thyme leaves, plus a few sprigs thyme for garnish (optional)
  • 4 large eggs
  • 6 ounces Greek yogurt or skyr
  • 1 cup olive oil
  • ¼ cup orange juice
  • 1 blood orange, for topping


Serves: Makes one 9 x 5-inch loaf


Preheat the oven to 350°F. Grease a 9 x 5-inch loaf pan. 

In a large bowl, whisk together the flour, strawberry powder, baking powder, cinnamon and salt and set aside. In another large bowl, stir together the sugar, orange zest and thyme leaves. Add the eggs and yogurt, and mix well. While whisking continuously, drizzle in the olive oil and orange juice to emulsify. 

Add the dry ingredients to the wet ingredients in two batches to form a batter. Stir until just combined after each addition. Pour the batter into the prepared pan.  

Cut the skin off the blood orange in a hexagonal shape and thinly slice horizontally. Decorate the top of the batter with the slices and thyme sprigs (if using). Bake for 60 to 65 minutes. Serve sliced warm or at room temperature.
