- 2 large eggs
- 2 tablespoons half-and-half or milk
- 1 teaspoon brown sugar
- ¼ teaspoon ground cinnamon
- ¼ teaspoon kosher salt
- 1 tablespoon unsalted butter
- 2 slices sandwich bread
- 1 slice sharp cheddar or American cheese
- 2 slices bacon, cooked
- Hot sauce
In a small bowl, whisk the large eggs, half-and-half, brown sugar, ground cinnamon, and kosher salt until the sugar is dissolved.
In a medium nonstick skillet over medium-low heat, melt the butter. Swirl it around the skillet, then pour the egg mixture into the skillet. Quickly dip the bread slices into the egg mixture, then flip the slices over and cook, undisturbed, until the egg mixture is cooked through, 4 to 5 minutes, checking periodically so it doesn’t burn underneath. Using a spatula, flip the bread slices and eggs over in the pan, then fold in any egg onto the bread. Arrange the cheese and bacon on top of 1 slice of bread. Cook until the bread is crisp underneath and the cheese melts, 1 to 2 minutes more. Fold the other slice of bread over the toppings and serve warm.
