John made this cocktail to go with Rach's Pasta with Peas, Ricotta and Pistachio. It's a vodka-based drink that includes lime, agave, club soda, cucumber, basil and something called St-Germain, which he loves. "It's elderflower liqueur," John explains, "so it's not too sweet and it's a little floral. It's kind of the perfect balance." (Rach says John used it in a margarita once in place of the orange liqueur and now she doesn't want her margaritas any other way!) The drink is light and the perfect match for Rach's cheesy, lemony pasta. "Cheers!" says Rach. 

Ingredients

  • 4 slices peeled seedless cucumber, plus 1 unpeeled for garnish
  • 1 sprig of basil, plus 1 for garnish
  • 2 ounces vodka
  • 1 ounce St-Germain elderflower liqueur
  • 1 ounce lime juice
  • ½ ounce light agave syrup
  • 3 to 4 ounces club soda

Preparation

In a cocktail shaker, muddle the 4 peeled cucumber slices, then 1 basil sprig. Add the vodka, elderflower liqueur, lime juice, agave and ice. Shake to chill, then double-strain into an ice-filled Collins glass. Top with club soda and garnish with unpeeled cucumber slice and basil sprig.
