Subbing spaghetti squash for noodles is a great way to lighten up your favorite pasta dishes like lasagna, shrimp scampi and spaghetti & meatballs. Not only does this cut down on calories and carbs, but it also ups your veggie intake (hello, fiber and nutrients).
“Biggest Loser” host Bob Harper is a huge fan and has a super-easy way to cook it:
HOW TO COOK SPAGHETTI SQUASH IN A SLOW COOKER
Just take a whole spaghetti squash, poke holes in the outside with a fork, and then put it in your slow cooker with a cup of stock or water. Cook on low for six hours, and you’re done!
Rach tried the technique, and when she cut into the cooked squash, she said, “It cuts like butter!”

Alternatively, another crazy-easy way to cook your spaghetti squash it to microwave it. Slice the squash in half and scoop out the seeds. Place half the squash cut-side-down in a glass container and add about an inch of water. Microwave on high for 5-10 minutes until soft.
HOW TO COOK SPAGHETTI SQUASH IN THE OVEN
The oven is also a great way to prep this veg. Preheat oven to 425°F. Place spaghetti squash cut-side up on a baking sheet. Spray with olive oil cooking spray to coat the top and season with salt and pepper. Bake until brown on top and soft all over, about 30-35 minutes.
