This healthy twist on chocolate chip cookies is gluten-free thanks to almond flour, plus packs antioxidants from matcha green tea powder and dark chocolate. It comes from lifestyle expert Tommy DiDario, who covers men's fashion, grooming, travel, health, wellness and fitness for us. - 2 cups almond flour
- 2 teaspoons organic matcha powder
- ½ teaspoon baking soda
- ½ teaspoon pink Himalayan sea salt
- 3 tablespoons coconut oil (in liquid form)
- ¼ cup organic maple syrup
- 1 teaspoon apple cider vinegar
- A small dash organic vanilla extract, optional
- ½ cup dark chocolate chips
Preheat the oven to 350˚F.
In a large bowl, combine the almond flour, matcha powder, baking soda, and sea salt. Whisk together coconut oil, maple syrup, apple cider vinegar and vanilla, if using, then spread over the ingredients. Fold until a smooth, slightly sticky batter forms. Fold in the chocolate chips.
On a parchment paper-lined baking sheet, use clean hands to shape small balls of dough, pressed evenly into a cookie shape. (Note: the cookies won't expand very much during baking.) Bake for 10 to 12 minutes, then cool for 20 minutes before serving.
