Pro Tip from Ezra and Adeev: You can adjust the amount of cayenne pepper and cinnamon to your liking, depending on how spicy and sweet you want the jerky to be. You can also experiment with other spices, such as cardamom or nutmeg, and flavor combos.
Trim any excess fat from the beef and slice it against the grain into thin, even strips.
In a large bowl, whisk together the coffee, soy sauce, Worcestershire, sugar, black pepper, garlic powder, smoked paprika, cayenne pepper and cinnamon until well combined.
Add the beef strips to the bowl and toss them in the marinade, making sure they are fully coated. Cover the bowl with plastic wrap and refrigerate for at least 2 hours or up to 24 hours to allow the flavors to fully penetrate the meat.
Preheat your oven to 175°F.
Remove the beef strips from the marinade, pat them dry with paper towels and arrange on a wire rack set over a baking sheet, making sure they are not touching. Bake the strips for 3 to 4 hours, or until they are fully dehydrated and have a chewy texture.
Allow the beef jerky to cool completely before storing in an airtight container for up to 2 weeks.
