Plant-based meals are everywhere these days, and Rach's kitchen is no exception! When one viewer asked what her favorite plant-based meal is, she couldn't stop at just one. Rach shares five of her favorite meatless dishes to cook during the fall and winter. Get inspired below:
1. Pumpkin Risotto

Rach cooks up a few riffs on pumpkin pasta every year. Right now, she's loving Pasta with Pumpkin, Brown Butter, Crispy Sage and Nuts and this decadent Pumpkin Pasta (just swap the chicken stock out for vegetable stock to make it vegetarian). We're also still dreaming about her recipe for Pumpkin Pasta with Vodka Cream.

4. Ramen Bowls

With her Ramen with Sesame-Miso Broth and Baked Crispy Tofu and Mushroom and Crispy Tofu Ramen Bowls, Rach proves that there's little better than a brothy, hearty, homemade bowl of vegetarian ramen on a chilly day.
5. Plant-Based Burgers

"We love Impossible—it's delicious," Rachael says. "In fact, John prefers it to beef." High praise!
